This is an organic perry that uses wild yeasts and is fermented using the ‘pet nat’/ancestral method. It tends to be cloudy with a pale gold colour and tastes sweetly sherbert-like; the big acidity balancing the sweetness beautifully. It has a rich moussey texture.
